Roast Beef in the Oven

3-4 pounds boneless rump roast
1 tbsp salt
1 tbsp black pepper
1 tbsp oil

Place Roast in the cast iron. Oil it all over and season with salt and pepper.
Brown on each side slightly.
Preheat oven to 375 degrees F. Roast in oven for 1 hour (20 minutes per pound).

Remove from oven.
Cover loosely with foil, and let rest for 15 to 20 minutes.
Slice thinly and serve with your favorite meal or in a sandwich.
Save the juice and use it to drizzle over the meat or dip your sandwich in it.
