Loaded Baked Potato Patties with Chili

INGREDIENTS: 4 - Servings
4 baking potatoes
1 cup chili
1 cup shredded cheese
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon black pepper
4 tablespoons of butter
2 tablespoons oil
4 - 8" foil sheets

2 cups of chili preheated
4 tablespoons sour cream
4 tablespoon shredded cheese
4 teaspoon chopped chives

Preheat the oven to 400 degrees F.
Oil potatoes and wrap each potato in foil sheet.
Bake for 1 hour or until potatoes are cooked through.

Scrape out the insides into the mixing bowl.
Smash the potatoes with the butter.
Add in the seasonings, cheese and chill. Mix well.
Shape potato mixture into 8 patties.
Place potato patties into a baking sheet and into the oven until the potatoes are warmed through, 15 to 20 minutes.
Spoon 1/2 cup of  chili into a plate.
Place 2 potato patties on top.
Top potato patties with shredded cheese and sour cream.
Sprinkle chives on top.
