For the marinade:
2 cloves of garlic
1/2 cup orange juice
1/2 cup lemon juice
1/2 tsp salt
1/2 tsp ground coriander
1/2 tsp red pepper flakes
1/2 tsp chipotle chili pepper powder
1/4 cup vegetable oil
For the rub:
2 or 3 cloves of garlic
1 tsp salt

1 tsp pepper
1 tbsp. ground coriander
1/4 tsp red pepper flakes
1/4 tsp chipotle chili pepper powder
1 tsp garlic powder
1 tsp. onion powder
1/4 cup vegetable oil
Preheat oven to 350°F

Cut pork loin in half lengthwise, and score it. |

Mix together marinade ingredients.
Place pork loin in gallon sized zip bag and pour over the marinade. Marinade the meat overnight.

Mix together rub ingredients. |

Rub mixture all over the surfaces of the pork. |

Brown meat on both side. |

Place meat in preheated oven to finish roasting Roast pork loin for 20-25 minutes or until the meat thermometer reads 160°F |
