Cuban Roasted Pork Loin

For the marinade:
2 cloves of garlic
1/2 cup orange juice
1/2 cup lemon juice
1/2 tsp salt
1/2 tsp ground coriander
1/2 tsp red pepper flakes
1/2 tsp chipotle chili pepper powder
1/4 cup vegetable oil

For the rub:
2 or 3 cloves of garlic
1 tsp salt
1 tsp pepper
1 tbsp. ground coriander
1/4 tsp red pepper flakes 
1/4 tsp chipotle chili pepper powder
1 tsp garlic powder
1 tsp. onion powder
1/4 cup vegetable oil

Preheat oven to 350°F

Cut pork loin in half lengthwise, and score it.
Mix together marinade ingredients.
Place pork loin in gallon sized zip bag and pour over the marinade. Marinade the meat overnight. 
Mix together rub ingredients.
Rub mixture all over the surfaces of the pork.
Brown meat on both side.
Place meat in preheated oven to finish roasting
Roast pork loin for 20-25 minutes or until the meat thermometer reads 160°F
Slice and serve this meat on Cuban sandwiches.
