Crispy Onion Rings

2 large sliced onions
1/2 cup of flour
1/4 cup of cornstarch
2 tablespoons dry potato flakes
1 cup cold club soda
2 cups of panko bread crumbs
2 cups of oil (vegetable or peanut)
Salt to taste

In large bowl mix cornstarch, flour, and potato flakes.

Add in cold club soda.

Whisk all the ingredients well.

Place panko in a separate bowl.

Dip onion rings in batter.

Than place rings in panko and turn to coat.

Preheat oil in sauce pan to about 350 F.

Place few onion rings at the time in oil.

Fry for about 2-3 minutes or till golden brown.
Remove from sauce pan and place on wire rack or paper towel to drain. Season with salt to taste.
