Breakfast Casserole

makes 6-8 servings
6-8 biscuits
Sliced Salami
Shredded Mozzarella cheese
6 eggs
Salt and Pepper

Bake biscuits.

Pan fry salami.

Beat eggs in a bowl, season it with salt and pepper to taste, and set aside.

Butter 9 by 13 deep dish. Halve biscuits. 

Place biscuit bottoms in deep dish in a single layer.

Top with fried salami.

Sprinkle Mozzarella cheese over salami.

Place biscuit tops over cheese.

Pour egg mixture over biscuits.

Sprinkle more cheese on top.

Cover with aluminum foil. Refrigerate for 30 minutes, so that biscuits can absorb egg mixture.

Preheat oven to 350 F. Bake covered for 45-55 minutes or until eggs are cooked.

Let rest for about 5 minutes before serving.
