Smoked Pork Butt

Pork butt
Cajun seasoning
Olive oil

Rub with Cajun seasoning. Place in zipple bag and marinade for 12-24 hours in refrigerator. 

Smoke at 225 F untill internal temp is 160 F.

Mopping sauce: 
1 cup of beer
1/2 cup of vinegar
1/4 cup of olive oil
1 tablespoon of Cajun seasoning
Mix all ingredients together.
Baste with mopping sauce every hours or so to keep meat moist.

When done remove from smoker, cover in aluminum foil and let rest for 15-30 minutes before serving.
