The most complicating part about cooking brisket is time, it takes at least 8 hours for smaller brisket or even longer for larger pieces. Unlike other meats brisket final temperature is not 160 F, its 195-200 F. And when its done cooking it takes about 2-3 hours of resting time. Even though it takes all day to cook brisket, at the end of the day it is well worth it.
Ingredients:
Brisket
Cajun seasoning
Trim off some fat, leaving about 1/2 inch
Season with Cajun seasoning, about 1 teaspoon per pound.
Poke with knife or fork every square inch or so. Poking will improve flavor.
Now you can leave it to marinade for few hours or overnight in refrigerator, but it will work without marinading as well.
Smoke at 225-250 F until internal temperature is 195-200 F.
Remove from smoker.
Wrap in foil well.
Wrap in towel and let rest for 2-3 hours before carving.
